Good and salty
I sous vide a filet mignon, set at 123 degrees, finish by searing with a rub of coffee, cocoa, coriander, chili powder, mustard, ginger. Sear for 2-3 minutes in beef tallow, and flip some of this salt on the meat at table. The salt is so good at enhancing this fine beef cut. Life is good.

Adds a layer of complexity to any dish, smoke flavor seems to be more prominent than just pure salt bitterness. On slow cooked meals a pinch goes a long way and brings some flavor with it. Im currently in an apartment so a smoker is out of the question lol but this paired with liquid smoke is the next best thing
