Best knife for a decade
I have had this knife for ten years. Purchased in 2012. This knife feels very good in my hand (very large hands). Although I have a selection of quality knives, this is my go-to when I pull out the cutting board. If kept sharp, you will enjoy prepping ingredients a great deal. I stopped looking for a better chef knife and am immensely pleased.

Wusthof optimal compromise knife
Purchased this knife for the new kitchen during the time I was moving from one place to another so it could use it as my only knife in a new place before I move all the stuff and be a good addition to all other knives after the move.To my disappointment the knife that came from amazon was clearly used! The knife was dull compared to other Wusthof knives and there was inconsistent edge wear, the handle had some scratches on it, the package was ok but allow easy repackaging.I needed the knife right away and for me it is easier to resharpen the knife then complaining and sending it back. The blade holds an edge very well, needs some touches from time to time to keep it razor sharp. A good honing steel is a best friend - make sure it has recommended hardness.The finger guard comes down to a sharp edge at the bottom and you can possibly be use it for opening cans if you really have to. The blade is wide enough to use it as beverage cup lifter - just be careful as continuous opening a bottles of beer may effect your ability of opening a beer and you can cut yourself with a very sharp knife.The wusthof x50crMoV15 is relatively high carbon (0.5%) and very good corrosion resistance steel. The shape and the length of the knife really makes it comfortable and safe for some chopping, slicing, its not bad for pairing and even pealing. The handle is on a slimmer side for my hands but very comfortable- a bit beefier might be better for larger hands.I think the knife does not come in any of the sets and is a very good compromise between larger 8-10 inch chief knives and smaller utility-paring. Instead of using block of knives I currently use only three knives on a magnet strip for cooking. I've noticed that I grab this knife sometimes when I would normally use it's larger brother 8-inch chief's classic ikon.Overall the it's a great versatile high-quality knife that can be used for many tasks. Do not use in dishwasher and highly recommend using magnetic knife rack.

Best knife in the kitchen
This knife took the place of my old chef's knife in the block, and is usually the only one that comes out when I cook.Small enough to use for paring and peeling, large enough to chop and dice. Sharpens easily, grip is comfortable, and bolster allows a sharp blade all the way to the heel AND prevents finger cuts from slipping up the heel.If I had a sheath for this knife, it could easily be my EDC and camp knife. This knife and a good hatchet and folder would let you handle almost any hunting or camping chores, especially if fish/game/vegetable processing were involved. It's that versatile.

Very happy
Since I do most of the cooking in the house, I am slowly upgrading the knives. I mostly use a 8inch cooks knife which has been working great but my smaller knives are useless. So ordered this one and it is quite amazing. Great feel in the hand, quality is undeniable and it is razor sharp and I really need to be wary when I use this knife. Tonight I used it to trim and cut up a pineapple. Admittedly I should have used a larger knife but I thought I would give this bad boy a go, I felt like edward scissor hands effortlessly carving away through the pineapples tough exterior. Looking forward to purchasing the 8 inch wusthof cooks knife when we can afford it to compliment this one.

one ofvthe best knives, period
had onebfor 25 years and it vanisheda, finally bought this to replace. the balance and edge is far superior to the Chicago Cutlery one I got for $20. this knife comes razor sharp and is very easy to maintain but watch when you're using because loosing a finger tip is too easy

The Sweetest Litte Chef's Knife Ever
I've been a fan of Wüsthof knives since I worked my way up to sous chef while paying my way through school. All the cooks had different knife sets (one of my favorites was a LamsonSharp set, forged locally in Massachusetts) and I got to try many styles of the French and German blade shapes. I couldn't afford good knives at the time, but after lots of testing, I found the German shape (strong curve towards the tip) the most pleasant to use; I prefer rocking slices to pulled slices (i.e., French style). Wüsthof epitomizes the German shape.This little knife is the perfection of the traditional German shape. Incidentally, I've found that I use this size of knife more on a daily basis than I use my 10" chef's knife or my paring knife combined. It is the perfect size for the many small cutting and slicing tasks I perform on a regular basis. It is extremely well-balanced, well-forged, and aesthetically pleasing both tactilely and visually.As a most unexpected and delightful addition to my knife set, filling a need I didn't realize I had, this knife is highly recommended.

Nice Professional Knife
It has a good feel to it when gripping the blade itself between the thumb and index finger. So easy to use! Comes with a very sharp edge, which I liked. Sharpened it once so far, and it's back to slicing like a laser!I don't know all the fancy lingo some others are using, but if you like a nice professionally-feeling knife for slicing, this one is totally worth the money! Even if you aren't a chef!

Good investment
I think cheap and brittle knives are one of those things which are a false economy as they break easily and don't sharpen so well, so you'll need to replace them often. That's without even considering the lack of sharpness that normally afflicts cheap knives. I'm not one who is easily swayed by celebrity endorsements but having seen Gordon Ramsay using a Wüsthof knife of a very similar size many times, I looked them up and bought this one due to the many positive reviews on Amazon. I'm extremely glad I did as this knife is perfectly designed for easy use when it comes to chopping most things. It fits very comfortably in your hand as the handle has a wonderfully smooth finish. The blade is the right shape and size for chopping most things that are not small and fiddly (incidentally I also own a much smaller Global 25th Anniversary Knife - 11cm which compliments this one perfectly and is also excellent). The knife is heavy and dense enough not to require much effort when it comes to chopping, even harder things like swedes and turnips, although I still think that my chopping technique could be improved!The one very minor issue I would have is that no plastic cover (or similar) was provided for the blade to protect it when storing. You do get a strong foam container with the packaging, which you could use for storage if you wished. As long as you look after this Wüsthof knife, and buy a decent sharpener for occasional sharpening, I am sure that it will last decades. Global 25th Anniversary Knife - 11cm

A sharp knife is a safe knife?
I'm a little accident prone so the old addage 'a sharp knife is a safe knife' isn't true in my case. I've cut myself several times already. This thing is so sharp you just have to touch the blade and you're cut. But it is a very good solid knife that holds its sharpness really well. I think part of the problem for me is I'm so used to a 20cm knife, and the 23cm just feels a little unweildy. Should have got the 20cm. My only real gripe is that a knife as sharp as this in this price bracket really should come with a sheath. Best knife I've ever had though.

An outstanding Chefs knife
The last 3 sets of chefs knives I bought came to around £30-£40. Usually these come in a block, and if you use these knives as much as I do then they lose their sharpness quickly and never seem to get that back despite the sharpening tool that comes with them.This knife is the best blade I have ever used in the kitchen. Whether you are slicing onions finely, or whether chopping herbs this professional knife makes it child's play. The carbon steel itself looks beautiful and will no doubt last years and years if looked after. I will now be saving up to replace my hole set with these Wusthof knives.A word of warning. All knives should be handled with care, however being used to using less than sharp variety I became a little careless, and nicked myself twice with this knife in a week when washing it. This blade is razor sharp so use the sleeve & end clip when storing.

I don't use this much.
This is a beautiful knife to look at and is really well made. If feels wonderful in the hand and is really sharp, a work of art. However, I have noticed that since I bought it, I have rarely used it. It is not really small enough to be a paring knife (it's got a wide blade) and not really large enough to be a knife for cutting a large joint of beef easily. If I were ordering again, I would either go for a size larger or a size smaller (a paring knife/classic utility knife). This is purely a personal preference, because, as I said, it is a wonderful knife in every other way.

Perfect for my wife's small hands
The title makes me sound like a misogynist but nothing could be further from the truth. I do pretty much all the cooking in our house and have a great set of Wusthof knives. My wife said she wanted to get more involved but my knives were too big so I bought her this small but perfectly formed alternative. Nice wide blade, solidly made (as they all are) with an ergonomically comfortable handle. Would recommend wholeheartedly.
