This is an Heirloom Quality Sheet Pan! Your Children will love you for it!
The best pan I have ever had! Sturdy, easy to clean, even heating. I have not had any warping issues. Some reviewers have mentioned warping and sharp edges under the rim. I have not had any of those issues. The rim is not rolled so that you can keep it clean. It is a commercial type pan folks, not intended for sissy cooks who are more concerned about their manicure than the quality of the pan and quality of the food it produces. BE SURE to get the 13 guage model, not the 18 or economy 19 guage versions. You will not be disappointed. This baby takes anything you hand it. I use it with CIA 23304 Masters Collection 12 Inch x 17 Inch Wire Cooling Rack for broiling and baking, and also without the rack for general baking and roasting. This is the last sheet pan you will ever have to buy. It makes roasted vegetables like the best restaurants. (Of course you need to know how to make them!!) I use it under pie pans and casserole dishes to catch spillover. I've even attacked it with oven cleaner to get at some really burned on crud, it comes out shining every time. I am an avid home cook... and a guy...this is my kind of cookware. Oh, BTW my wife likes it too!! This is the pan that you hand down from generation to generation... not as pretty as the heirloom diamond ring, but a whole lot more useful! :-)I have also read that some folks say they couldn't get 2 pans apart when they were stacked together...really????... try heating then in a 300 degree oven and then pour ice water into the top pan...have a wide flat head screwdriver handy to use as a persuader...if that doesn't do the trick, then someone soldered them together just to piss you off!!Oh, I also like that a sheet of regular Reynolds Wrap is the perfect width for the pan bottom when you need it. Fantastic pan, but be careful who you buy it from
This is a wonderful sheet pan, and as Norton South, "Decoder" meticulously demonstrated in his review, this Lincoln Food Service heavy duty half sheet pan, which received high marks from America's Test Kitchen, is now called Vollrath Wear-Ever, model number 5314. So far I have baked beautiful chocolate chip cookies with it (the America's Test Kitchen recipe), and roasted vegetables (a mix of carrots, parsnips, pearl onions, small potatoes, and mushrooms). The pan performed beautifully - cookies even and perfectly baked, vegetables roasted to caramelized perfection.My pan has different hallmarks than the pan pictures submitted by other reviewers. Mine has the model number, 5314 (identified by Norton South, "Decoder" as the 13 gauge heavy duty), VOLLRATH below that, WEAR-EVER below that, MADE IN USA below that, and the numbers 29110 below that. There is also an NSE hallmark in a circle. I'll post a photo as soon as my phone charges :)Be careful who you purchase the pan from, though. I ordered mine through Amazon.com, and the order was filled by Next Day Gourmet L.P. I ordered two half-size sheet pans. They came very poorly packaged, loose in a box with a BIT of brown paper stuffed on top of the box. There was no damage to the box, but when I removed the sheet pans, I noticed that one of them had FIVE dents in it and several scratches. I phoned Next Day Gourmet L.P., and to their credit, they said they would send out a replacement immediately, and did not require me to return the damaged pan. After I got off the phone with them, I took a second look at the other pan, and found that the lip of the second pan had a big dent in the corner. This was not in a place that would affect the performance of the pan, so although I was disappointed to receive TWO dented pans, I did not call them back to report the damage to the second pan.Several days later I received the replacement pan, and it is in good condition. So, I ended up getting three pans for the price of two, although only one is completely undented. The pan with the multiple dents will still be serviceable for some types of cooking, such as roasting vegetables, but I wouldn't use it for baking cookies.I highly recommend this pan! I'm still waiting to receive the CIA 23304 Masters Collection 12 Inch x 17 Inch Wire Cooling Rack, Chrome Plate Steel that I ordered to go with the sheet pan.UPDATE: Be careful not to put these pans in the dishwasher! My husband put two of them in the dishwasher, they tarnished and corroded. Aluminum cannot be washed in the dishwasher - the dishwashing detergent is too alkaline for aluminum products. WASH BY HAND.After he ruined the two pans, I ordered two more. These arrived from Crosslitt Kitchens, and they were VERY WELL packed in foam sheets and wrapped in plastic sleeves. They arrived in perfect condition, unlike the first pans that came in poorly wrapped and in poor condition by Next Day Gourmet.I use my Vollrath heavy duty half sheet pans constantly, most often for roasting vegetables, making cookies, empanadas, and biscuits. They perform beautifully every time. I have had a few occasions when the pan has warped upon removing them from the oven, but each time I gently pressed on the pan (with hot mitts on) and they returned to shape instantly.

Good, But There are Better
Good, substantial pan. I bought it because Cooks Illustrated recommended it. However, I also bought the Vollrath (5303) 17-3/4" x 12-7/8" Half-Size. The 5303 is superior to this pan, in that it's heavier and does not buckle whatsoever. This pan (5314) can buckle a little, especially when I'm broiling asparagus on it (10 minutes under broiler). I'd purchase the 5303 over this any day. Also, the edges on this one are a bit unfinished compared to the 5303 (meaning, the edges are rolled under, but not all the way under, so the edge is just a little sharper, less rounded under). Not a big deal, just a data point. One other thing, at the same time I ordered these pans, my husband came home from Sam's Club with "Daily Chef" brand pans, same size and (I think) weight. They are just as good as the other Vollrath, 5303, for less money. FYI, the back of the pan says: Daily Chef Food Service, 80716WH, Made in USA, 26615VU.
