The dal arrived in a clear re-sealable plastic pouch (great for helping to keep the dal fresh).To prepare kitchari, one has to wash the beans twice then add approximately 6 cups of water to the rice and dal and let it cook until both become soft. This takes about 20 minutes plus or minus. While the rice and lentils are cooking, prep any vegetables you want to add and then throw them in and cook with the rice and dal for another 10 minutes or so.In a separate saucepan sauté cumin seeds and mustard seeds in ghee until they pop and then add turmeric powder, coriander, powder (I grind my coriander powder from seeds I have purchased), cumin powder (also ground fresh) and asafetida and then add some cilantro leaves. Then put the spices in with the rice and dal and stir.
