Will this fit my cz p09 with shield rms red dot?

No it won’t this has aborted venom foot print will not match shield.

Will this work with a s&w 1911 performance center w/ adjustable rear sight? is there a mount plate that does?

The dove tail insert fits the standard Colt 1911 Govt. I mounted it on a Para Ord 1911 with only some minor fitting. I know that there are different dove tail cuts, and some are proprietary. I don't know what style S & W uses.

Any one attach this to a kimber custom 2? Fit good?

The sight mount I received was very nice. Did it fit my application? Absolutely not. Did I order the wrong thing? I don't know. Did they send the wrong thing? I don't know. What i do know is after purchasing 10 optic mounts of different variations I have made the decision not to purchase such items on this platform as MOST of them are poor quality, inferior construction, and not what it claims to be. I have found that there are plenty of distributors that can get me licensed products equally as fast and it comes with peace of mind.. just my 2 cents
