Great for juicing
UPDATE: Long term update. I finally chipped the blade today which I think is probably inevitable but it did take me 3 years of regular use. I bought a new set rather than use a chipped blade because I'm afraid I might chip off another piece now that the blade isn't 100% straight I may not notice and could end up with a chip in my food (yikes). It was really my own fault, I dropped a pretty heavy glass bottle on it. Obviously you can't chip a metal blade so that is a drawback of ceramic. However, this blade has remained razor sharp through 3 years of fairly heavy use. For me that's worth the cost even if I have to replace it when I break it (in this case after three years, next time hopefully even longer!) Original review: I cut up a LOT of fruits and vegetables that I feed into this juicer Omega VRT350 Heavy Duty Dual-Stage Vertical Single Auger Low Speed Juicer . So it was really important to me to have a knife that doesn't need to be honed all the time. I wanted something that would start sharp and stay sharp without a lot of maintenance. When I first got the knife I washed it and cut up a pineapple. My first cut was to take off the top and honestly my first words were "holy s***". It slid through the pineapple with almost no pressure at all. I read almost all the comments before I bought this set. I want to address a few of the more common comments. First, anyone buying this set needs to understand that material physics go like this, the harder something is the more brittle it is. Ceramic blades are extremely hard and thus must be extremely brittle. So yes, you have to be careful with this set but that is not Kyocera's fault it is just the way that materials work. For something to be both very hard and not brittle it would be Adamantium and that only exists in comic books. So the brittle nature of the blade is just the way it is. Accept that up front and you'll be much happier with this blade. Next, I'm not sure if they recently upgraded the handle but I'm having no trouble with it even when it is wet. The handle has a very lightly textured pattern to it and it gives me plenty of grip. I think if the handle it not providing enough grip then you are trying to cut something you should not be cutting with this blade. For people who have said the blade isn't sharp I think they may have gotten a badly honed blade. As I examined the edge very closely I noted that the way it was sharpened suggests to me that it was done by hand. What I mean is that the honed part did not have a uniform thickness across the entire knife blade. So it seems possible that now and then the factory honing might not be done quite right. I recall one review from someone who had trouble cutting celery and another who had trouble cutting tomatoes. If that is the case they should send the knife back because if it is honed correctly it will go through a tomato like butter (mine does). For people who have the white blade I would not be too concerned about staining. I've used the pairing knife to pit cherries (not prying! just slicing around the pit) and there is no hint of staining on the blade. And anyone who worked with a lot of fruits and vegetables knows that cherries are one of the most staining fruits around. Overall I think anyone buying this set needs to be aware that a ceramic blade is a specialized tool for a specific task. It is a great addition to the toolkit if you are slicing a lot of fruits and vegetables and don't want to have to hone your blades after every few uses.

Great Knife, knowing the restrictions
After reading all the praise for ceramic knifes, and wanting one after i saw Ming Tsai use these on Food TV a long time ago, i finally ordered the set. They are SHARP, of course i read all the dos and don't of them, but the Santoku is now my go to knife for nearly all kitchen tasks. I also bought a Shun 8" Chefs knife, a victorinox 10" and a Deba at the same time, but i use this one more, at least until i am more proficient at sharpening. They have a good feel in the hand and handle very well. I was worried about chipping the blade (still am) but one of my major concerns cutting apples and lemons (with the seeds) was proven not necessary. Obviously i would not take the blade anywhere near an avacado or mango pit! Chopping/slicing tomatoes has been one of my major issues in the past, for wanting to get a really sharp edge, this knife makes it a pleasure - however there have been one or two instances where the knife pressed against the skin rather than going through, probably because of a grip/angle issue on my part. you do tend to go slower with the ceramic mostly out of fear for hurting the blade, on onions this can be a bad thing at times (you get a fine cut, but due to being slow you can get the fumes) should improve with time and confidence of the blade. Garlic is also another thing, you can absolutely NOT crush/smash the garlic with the broad side of the blade (i'll use my palm or a pestle if its handy, if i have to pick up another knife i may as well finish with that one!) Its only been two weeks or so, but i am keen to see how long the edge actually holds, Kyocera do make a sharpener, but for the price i figure you could simply buy another set (especially if this one keeps an edge longer than a year) and then simply send the dull ones in to Kyocera - but for less than 60 bucks a good investment. I didn't buy the knife block, i do have a blade guard on it, and i keep it either on top of or inside the original box, at least for now.

Best. Knives. Ever.
Attended a knife skills cooking class and learned that I naturally held a knife wrong. The classes demo*d lots of world class knives, I clouding these . Which were wicked sharp AND light enough I naturally held correctly so had much better control. Bought extra set for myself and three other sets as gifts for family. They are still in daily use .. since 2009. We have had 2 breaks. Both in the hands of house guests & were covered by Kyocera warranty. In household hand we've had NO problems. They ARE ceramic, so we don't pry, smash garlic, or debone with them. We do not put any knives in the dishwasher or store in a humble drawer. We clean after each use (easy wipe and dry) and store in a block blade UP. Use them for 99% of our kitchen cutting. Renew the blade edge w Kyocera's home sharpener. I'm buying another set today - house-sitting for a friend and her classic steel knives can't get a thin clean slice of a lime. They are the Best Knives.Ever.

Sharp Like a Frog on a Lily Pad
I've been using pretty dull knives for a long while. When I saw these up for a lightning deal, I jumped on the opportunity to give them a try. The first test was slicing tomatoes. With my dull knives, slicing through the skin was impossible-- I have to puncture a hole first. Both the paring and santoku knives sliced through the skin and tomato with little effort. Just for fun, I tried cutting a slice of tomato as thin as possible. It was so thin, that it was nearly transparent! I'm very impressed with these knives. Now I have to becareful not to cut myself after so many years of 'worry free cutting' (i.e., Careless cutting due to inability of dull blades to cut skin!). I've since cut zuccinni, cucumber, boneless steak, and boneless chicken (trimming fat off chicken has always been a chore, but not anymore!) with great results. Pros: The blades are ultra-sharp. They supposedly stay sharp for years on end. The knives themselves are very light. Cons: Can't think of any cons exclusive to this set of knives. As with all ceramic knives, they chip easily so only use on 'soft' items as per the instruction manual. They are difficult to sharpen, but Kyocera offers free sharpening. Also, they should be washed by hand. Update: I've since cut potatoes, eggplant, carrots, mushrooms, tomatoes (awesome not squishing them with dull knives anymore), pork, garlic, onion, etc. The knives still cut with ease. I now keep them in the Kyocera KBLOCK3 Bamboo 3-Slot Knife Block for worry free storage.

A Great Kitchen Addition!
Speedy service, great quality, and a great price! Perfect for the kitchen! Much sharper than typical metal knives and stays sharp. You never have to sharpen it! Also, dishwasher friendly. Just don't drop it or use it to cut on metal or the blade could chip or crack. Highly recommended product & seller!

So sharp but so fragile
I have been using some dull knives for a long time and decided to upgrade. When I read the reviews, some of them did warn that the only problem with these knives is they are sharp. I took it as a good sign and grabbed a set when it was on sale. As warned, I cut myself the third time using it, but they're so sharp that makes cutting hard vegetables a snap - I can't even go back to my old knives anymore (they've been put to hibernate) Now, they do stain, especially after I cut carrots, the white blade turns a little orange despite prompt washing, but since they make my life so much easier, a little stain is really no big deal. The real problem is, because it's ceramic, it's very fragile. When I goofed and left the Santoku on the rack, it slid into the sink and you guess it, it chipped, right in the middle of the blade. But I'm sure it will still work better than my old knives, so I probably will come back for another set in the future. If you always get frustrated cutting, these knives will set you free!

DANGER DO NOT BUY: could have badly injured my family--sharp knife pieces ended up in the food
I've only used this knife four or five times. I wash the knife by hand and store in the original packaging. I was cutting boneless chicken, onion and garlic. Just as I was beginning to cook the food, I happened to see two notches missing in the knife blade!! Somewhere two razor sharp chips of this knife were in my food--impossible to see or find, especially in the chopped onion and garlic. I am horrified to think of the medical emergency that would have happened if I didn't notice the chips on the blade and someone--including our children and guests--chewed and/or swallowed these tiny shards of crazy sharp blade pieces. This is my first negative review of any product. DO NOT BUY--I used the knife as instructed. It simply is not worth the risk!!

Great knives!
Take a look at the pics I uploaded! I've used all kinds of knives over the years, and I really like these knives. And what's even better, is the fact that when other people try this knife at my house they say "wow this is so easy to cut with!" Pros: + Cutting edge is sharp and smooth, but not so sharp that you'll cut your eyeballs just by looking at them. + Balance feels good. + The handle on the large knife is proportionally-bigger than the small knife, and it fits well in my large hands. + The white ceramic color makes it easy to tell when you've thoroughly clean it. Cons: - I don't like the white ceramic color of the blade when it is resting on my white counter tops; it makes the knife hard to see, and a possible safety hazard. - The build quality on the handle seems kinda "meh", but is completely acceptable considering the reasonable price of these knives. - I wish the small knife had the same-large-handle that comes with the big knife :( I recommend these knives to anyone! UPDATE (Aug 28th 2012): I chipped the end of my knife when I was moving too fast and hit it against my counter top. See the attached picture for a visual.

Parfait!
J'ai reçu ce coffret en cadeau il y a un peu moins d'un an, j'en suis tellement contente (je ne pourrais plus me passer de ces couteaux) que je l'ai offert à mon tour. Le coffret noir est du plus bel effet et surtout les couteaux sont fournis chacun avec un étui. Il est dommage que cela ne soit pas précisé dans le descriptif car c'est un vrai plus, si vous souhaitez ranger votre couteau dans un tiroir l'étui est un élément indispensable compte tenu de la fragilité des lames céramiques. L'efficacité des couteaux céramiques n'est plus à démontrer (essayez de couper du saucisson bien sec par exemple, c'est un vrai bonheur!) et Kyocera est une excellent marque, avec un très bon rapport qualité/prix. Je recommande vivement.

Ganz tolle Messer
Bisher hatte ich preisgünstige (aber keine billigen) Messer in meinem Haushalt. Teilweise waren sie schon älter, aber nicht schlecht von der Qualität. Irgendwann hatte ich die Idee, das „alte Zeug“ auszutauschen. Schon länger hatte ich den Wunsch, japanische Messer auszuprobieren. Mein erstes "teures" Messer war eines von Kai Shun (nicht über Amazon). Ganz tolles Messer. Eine Bekannte gab mir den Rat, die Keramikmesser von Kyocera zu kaufen, da diese von der Qualität ebenfalls sehr gut sein sollen. Ich hatte zwar eine Vorstellung was ich möchte, aber Vorstellung und Preis der Messer passten nicht immer so ganz zusammen. Dann sah ich dieses unschlagbare Angebot. Meine erstes „Test-Opfer“ war eine sehr harte Salami. Mit meinen alten Messern musste ich schon einen halben Handstand machen, um diese zu schneiden – hier ging es mit Leichtigkeit durch, sodass ich meine Finger auf respektvollen Abstand zur Schneide brachte. Dünne Scheiben waren/sind kein Problem. Natürlich ist ein Keramikmesser empfindlicher und können bei unsachgemäßer Behandlung zerbrechen. Aber wer solche Messer besitzt, wird mit Sicherheit aufpassen. Ich würde sie aber nie in die Spülmaschine legen, sondern immer mit der Hand reinigen. Das mache ich generell mit Qualitäts-Messern. Fazit für mich: Ich habe tolle Messer erworben, die ihr Geld wert sind. Sie sind leicht, sehr scharf, liegen gut in der Hand und lassen sich auch ganz einfach reinigen. Super Qualität insgesamt. Jetzt macht das Schneiden richtig Spaß. Somit – KAUFEMPFEHLUNG von mir. Danke auch an den Shop und Amazon für die schnelle Bereitstellung und Lieferung.

Die besten Messer, die ich habe!
Auf Keramikmesser bin ich gekommen, als sie vor einiger Zeit in einer Supermarktkette im Angebot waren. Dort habe ich mir mein erstes für 6€ gekauft und fand es eigentlich schon super. Ich habe mich daraufhin hier bei amazon rumgestöbert, und mir aufgrund der durchweg positiven Rezessionen diese Messer hier bestellt, da ich noch mehr davon haben wollte. Zudem wollte testen und wissen, ob es einen Unterschied zwischen "billig" und "teuer" gibt bzw wie groß dieser ist. Die Messer waren blitzschnell da, wie man es ja gewohnt ist! Und was soll ich sagen?! - WOW! Einfach nur wow! Die Messer hauen echt alles klein, was ihnen in die Quere kommt. Ob Karotten, Zwiebeln, Fleisch,.... Es ist ein ganz anderes Gefühl zum Schneiden, als mit dem Herkömmlichen Messern (von denen ich eigentlich bis dort dachte, dass sie gut sind; auch merkt man Schneidtechnisch einen Unterschied zu dem günstigen Messer.) Seit ich diese Messer habe, liegen die anderen zum Kochen eigentilch nur noch gelangweilt in der Schublade. Es wird alles wie Butter geschnitten..es geht ganz einfach! Die Klingen sind sehr schmal/dünn, daher kann man wunderbar ganz, ganz dünne Scheiben schneiden (das geht z.B. bei dem "billigen Messer" nicht, dort kann man nur dicke Rampen schneiden und es liegt auch lange nicht so gut in der Hand!) - und nein, keine Angst, sie brechen nicht! :-) Ich habe denke ich schon alles damit kleingeschnitten, was man zum Kochen verwenden kann :-D (Kohlrabi, dicke Karotten,...alles absolut kein Problem. Auch Knoblauch kriegt man so fein wie aus der Presse) Ich muss dazu sagen, ich habe auch schon ein "gutes" Messer von WMF (80€), das ist zwar echt auch gut - aber diese Keramikmesser sind noch um Welten besser! Natürlich muss man aufpassen, dass man diese Messer nicht auf den Boden fallen lässt - aber mal ehrlich, wie oft passiert dieser Fall schon? GANZ KLARE, UNEINGESCHRÄNKTE KAUFEMPFEHLUNG!!! Die Messer sind das Geld wirklich wert, und glaubt mir, wer einmal diese Keramikmesser hatte, will definitiv keine anderen mehr!! Ps; Habe diese Messer auch meiner Mutter zum Geburtstag geschenkt. Auch sie benutzt sie täglich und ist rundum begeistert!
