If two are purchased (one for each radio), can one device (Ipod, Android etc) be used to stream to both units at the same time?

I believe your device will only be able to connect to one at a time. In other words you would have to connect your device to one of the two Esinkins.

How does it work with multiple devices? It seems I have to disconnect from connected device first before the next device can connect.

Yes with Bluetooth you have to disconnect each devise before connecting another but if you turn the NFC on in your devises all you have to do is set it on top of the devise.
