A brilliant must have for any serious confectioner
As both a chemist and candymaker I can only kick myself for not finding this book sooner. It's not a recipe book, but a book that brings to life the scientific principles behind varying types of candy. Once the understanding behind the candy is mastered, the sky is the limit! I can't recommend this book enough if you are serious about making candy.

Interesting read
This book gives good insight into the candy industry from a food science perspective. Most chapters focus on a specific type of candy and the science behind it. It's a lot more interesting than a text book and is easy to understand (even if you don't have a background in food science).
