Is stainlesssteel cladding inside and outside, or just inside? What are thicknesses of each layer?

Our Jelly Roll is cladded on the outside. Each of the two external layers are T-304 Surgical Grade Stainless Steel each measuring .015 thickness.

Where is this really made? on your website you say "made in usa from globally sourced materials:" that could mean the steel could come from china ...

Hi. The following will give you an outline of the parts and manufacturing process. As you see in our title we are handcrafted in the US. 
In 2019, our last dependable source for high-quality materials shut their doors and concluded business. Unable to find another vendor to support our needs, 360 Cookware was forced to outsource bonded materials from South Korea. 
Our team has worked diligently to assure all materials derive from sustainable sources to maintain both integrity and quality. While we are huge believers in bringing manufacturing back to the USA, in this scenario, it was simply not an option. We’re happy to report our partner in South Korea produces the highest quality material we have ever worked with.  
We look forward to the day we can resume purchasing materials in the USA, but until then, we promise to procure equally excellent products regardless of origin. 
Just last year, we brought our rivets back to the USA. This year, we have big goals of adding metal handles to that list. We’re going to stay strong, and work hard until all 360 Cookware and bakeware is once again “Made in the USA”.

The interior size is less than an 9 x 13 baker. Can it do anything that an emile henry 9 x13n cannot?

I have both, and both are well made. My husband likes the jelly roll pan for bacon. I definitely use the Emile Henry more. The Emile Henry has taller sides, which you can see as a benefit or not, depending on your use. The other difference between the two is origin: Emile Henry is made in France, while this jelly roll has unclear origin, vaguely stated as "made in USA with global materials" which makes me not trust it.

Question 4

What are the interior dimensions?  Height?  Details about the rim - wire or not?  Safe to what temperature?

Good Morning! The interior dimensions are 12.5 inches by 8.5 inches. The height is 1 inch. The bakeware is cladded surgical grade stainless steel with an aluminum core for even heat distribution through out the pan. This carries through to the rim. There is no wire.
