either one...I mostly put it on my finished food as a seasoning. I also use it in some some recipes as a cheese sub. For example, I make a breaded fried tofu , the breading has nutritional yeast. YUM!

Once opened, I would think a month on the shelf-longer if refrigerated. It's a dried produce so keep it dry.
