I have been looking forever for the best cheese knife and I’ve found it. When you cut hard cheese, the knife has a lot of pressure on the blade. A kitchen knife is too long and thin. With this knife, the angle of this blade to the handle means you can cut down to the board. The handle is such that it doesn’t roll in your hand. The cleaver shape of the blade allows you to put tremendous pressure on what you cut. Lastly, the blade folds shut so when you are carrying a cutting board of food or after a bottle of wine, the knife doesn’t slide and cut you.
