Truly quick and easy and certainly delicious!
Love this cookbook! The recipes that I have tried are super simple and easy to prepare and taste wonderful as well! They truly are quick and easy which is great when you want a healthy home cooked meal but don't have a lot of time to prepare one!

Family friendly recipes
The Quick & Easy Healthy Cookbook by Carrie Forrest is a recipe collection and cookbook for healthy nutritious meals based on whole, unprocessed, organic ingredients. Released 17th Dec 2019 by Callisto on their Rockridge imprint, it's 186 pages and available in paperback and ebook formats. It's worth noting that the ebook format has a handy interactive table of contents as well as interactive links and references throughout. I've really become enamored of ebooks with interactive formats lately. Each recipe has a header with special symbols such as nut-free, gluten-free, sugar-free, with a short description of the recipe and approximate prep-times. The ingredients are listed bullet style in a sidebar. Measurements are given in US standard only. (There's a metric conversion chart in the appendices). Special tools and ingredients are also listed, along with yields and cooking directions. Alternative preparation ideas and tips are listed in sidebars. Nutritional information is also given in a footer at the end of the recipe instructions. The included recipes are made with easily sourced ingredients and the instructions are crystal clear and easy to follow. The photography is not abundant; most of the recipes are not illustrated, but the photographs which are included are clear and well done. I wish there had been more photographs and serving suggestions, but I do understand that extra photography increases the price of book projects very quickly. Most all of the recipes are sensible and family friendly. They're arranged thematically: breakfast, soups & salads, vegetarian mains, seafood, poultry, meat, snacks & sides, desserts, and basics/partial ingredients/staples. This is a traditional time of year to consider making healthful choices and this book will provide some good starting points for whole food eating and nutrition. Four stars. Recipe was delicious!
I wish there were pictures of the food, but other then that, no complaints. I’ve only made one of the recipes but I loved how easy the steps and ingredients were written! I made the turkey Parmesan meatballs and there were amazing!!!

Good information, ok recipes, no wow factor
The Quick & Easy Healthy Cookbook has a lot of plusses going for it but the bottom line is that it is too much like hundreds of others on the shelf. There’s no WOW factor. The author has obviously put a lot of time into research and the writing. She encourages everyone to eat whole foods and shares recipes that make them (as the title claims) quick and easy to prepare. The book starts by giving some tips to follow such as making weekly meal plans, prep ahead of time, cook in bulk and taking advantage of many of the appliances you have in the back of the pantry that you rarely use. The recipes are labeled nut free, gluten free, daily free, soy free, vegetarian and vegan so you can go to what you need or avoid them, if necessary. She’s also noted what’s extra quick (20-min or less), kid friendly and freezer friendly. When we get to the recipes they’re well laid out with an introductory paragraph, ingredient list and cooking instructions. The author also has noted active time and total time to prepare – I like this. Then there’s the yield and serving size along with the nutrition info on each recipe. As an added bonus most recipes have a tip such as where to buy your beets (in the refrigerated section of your market they have packaged roasted beets). Other tips include freezing instructions and substitutions. I tried several of the recipes with mixed results. The Sausage and Cabbage Low-Carb Bowl was a real treat. It reminded me of what my grams made over 70 years ago. The Turkey Taco Pasta Skillet was also very good. Unfortunately the Italian Pasta Salad was very dry and I ended up using left over pasta water and more EVOO to make it palatable. I can’t find much fault in the recipes except that they’re just too ordinary to devote an entire book to. Also, except for the section headers there’s no photos. I always take off a star for this omission. I know it adds to production cost but I want to see the end results I’m aiming for. Overall this book gets 4 stars minus 1 for no-pix.

Delicious and Simple
Both my husband and I love this cookbook. The meals are super simple, but packed with flavor. Everything we've tried has been amazing!
