Q: Can you make this in the microwave?

I don't believe so. The cooking and stirring on the stove is what will thicken and smooth. I think if you do it in the microwave, it will be lumpy.

Q: Do you have to have the butane torch for this?

The carmelzing sugar is in the package and you can do it under the broiler, or with a torch. Watch carefully if you do it under the broiler.... Browns very fast.

Q: do you caramelize sugar before cooling in refrig?

Here are Chef Alton Brown's instructions. Bon appetite! Remove the ramekins from the roasting pan and refrigerate for at least 2 hours and up to 3 days. Remove the creme brulee from the refrigerator for at least 30 minutes prior to browning the sugar on top. Divide the remaining 1/2 cup vanilla sugar equally among the 6 dishes and spread evenly on top. Using a torch, melt the sugar and form a crispy top. Allow the creme brulee to sit for at least 5 minutes before serving.

Made this for tonight’s dessert.

I love cream brûlée but unfortunately it takes more time and work than I want to go through, plus I didn’t want to go to a fancy restaurant to pay $10.00 to share one with my wife. Bought this and I only needed to add 1 cup of milk and 1 cup of whipping cream along with the package of mix. Pretty simple. Poured it into 4 bowls and after dinner I sprinkled the included surger and used by little blowtorch to melt it. Damn it was good. Maybe not as good as the $10.00 stuff but all 4 of us really enjoyed them. Much better than just a bowl of ice cream.
