Yes, if the dish is too hot, it will inactive the myrosinase enzyme. Therefore, it's best to use the broccoli sprout powder in a cooler dish such as a smoothie, juice, sauce, dressing, etc.

Is any heat applied to the sprouts after harvest? If so could you please elaborate?

Once the broccoli seeds are sprouted, they are immediately frozen, then freeze-dried. There is a small amount of heat applied during the freeze-drying process, but only enough to raise the temperature in the drying chamber to just above the freezing point to sublimate the water out. We test all the finished broccoli sprout powder for myrosinase activity to ensure the enzyme is still active in the finished powder. Hope this helps!

How much sulforaphane per scoop?

We technically do not test for sulforaphane but instead test for the molecule that is a precursor to it, Glucoraphanin. Glucoraphanin turns into Sulforaphane once water is added and as long as there is active myrosinase enzyme present (we also test to ensure active myrosinase enzyme). We do not standardize these to a certain level as our goal is to maintain through freeze-drying the levels that are naturally found in the raw sprouts, but the last batch we tested, tested at approximately 70 mg of glucoraphanin per 1 scoop (3.4 g) of powder.
