Simply amazing
I am so glad I went with Japanese steel. This particular model is amazingly lightweight and incredibly sharp. Best knives I’ve ever owned.

Amazing Knife!
I break down lots of fish and use this knife for sashimi and it is awesome! Crazy sharp out of the box holds that edge for a long time and I can skin and process fish so much cleaner and faster now with this knife it's insane! To top it off the knife is absolutely gorgeous and I love the handle!

Super flimsy and soft, probably made of aluminum
The worst purchase I’ve ever made in my entire career as sushi chef for 22 years.All this time I’ve always used Global and Victorinox knives, In January I’ve decided to give this a try, it was great, thin, light, super sharp, until one day I noticed it was bent, not straight, I thought it must be hard to fix it, but that’s not the case. It is EASILY bendable, for our fast paced, busy place, it’s very annoying, you’d have to put it on the flat surface to straighten it up, like 2-3 times a day.If you want this beautiful knife for decoration, it’s great looking and perfectIf you want to cook using it, it’s more bendable and softer that $3 knives at Walmart.
