Can I use this in baby formula?

Yes, it does thicken up well , and you can thin it by adding a teaspoon of water and stirring.

Can you thicken pasta and gravy sauces with this in general cooking?

Just use regular corn starch. I use it for gravies for roast beef, stew, pot roast and chicken and turkey gravies. Also use it for alfredo and just a tiny bit for marsala sauce.

Was wondering the shelf life .or expires ?
