It’s only for bare wood. It will not penetrate paint.

My butcher block has a tiny gap. Should I fill before sealing?

Don't fill in the gap with anything. Use food grade mineral oil, not waterlox. You don't want anything in the wood that the food can adsorb.

I have unfinished butcher block countertops - is this the only product I need to use? Will it bring out the color of the wood?

I used this on my butcher block counter tops in both my kitchens. It works beautifully. Plan on using at least two if not three coats. It slightly darkens the wood, and brings out the grain. Water beads right off. Don't make the mistake of putting a hot pan on it (now I have a darker ring) though I imagine that would happen with any finish.

Yes, it can be used on a wooden buffet to convert into a bathroom vanity. We used it on butcherblock for our kitchen, and haven't had any problems with it. You will have to sand off all the previous stain and varnish because it needs to soak into the wood to protect it.
