Great Cookbook
I love the America's Test Kitchen cookbooks and own most of them. I love that their recipes are reliable and delicious. I love this particular cookbook as well. Chapters are: Soups; Stews and Chilis; Chicken; Beef; Pork and Lamb: Seafood: Vegetarian: Pasta and Noodles; and Desserts. All recipes are for sheet pans, dutch ovens, sauce pans; slow cookers and Instant Pots. Some recipes have instructions to cook in 3 different ways, so you can make it in whichever way is easiest for you. Chapters also include "on the side" recipes for side dishes, like rice, cauliflower rice, basil pesto, garlic toast, mashed potatoes and sauteed summer squash to name a few.So far I have made Corned Beef and Cabbage in the slow cooker. The cabbage fits into the slow cooker with the corned beef, so you don't need to make it separately as you do in most recipes, plus the prep was super easy. It was very good. I also made the Easy Tortellini Minestrone in the dutch oven, which was both easy and delicious. I recommend this cookbook.

Nice cookbook. Many options for dutch oven or instant pot or oven tray.
I first saw this cookbook at my son's house. He was a fan and said he had two copies, one that was worn out from overuse causing it to fall apart. He liked it so much he bought another copy. I saw a few recipes that looked appealing to me, in addition to the dinner cooked by my son. I have used this cookbook for several different recipes and have been happy with the ease of following the instructions. I like that there are options for cooking for one or two servings vs. cooking for a family.

LOVE this book!
This book comes with lots of color photos of how your meal "should" turn out, which is a plus. The recipes are very diverse. So far, I've made the "Beef en Cocotte with Creamy Mushroom Barley," "Smothered Pork Chops with Broccoli," and "Turkey Meatballs with Coconut Rice, Bell Peppers and Peas," (which is my current favorite.)You'll probably have to go to the store to get some of the ingredients, which might not be kitchen staples, but make the recipes interesting. You may even have to ask your butcher for specific cuts of meat. Since Covid, meat has been difficult to shop for. I find myself walking directly to the meat department first to see if they even have what a recipe is calling for before I shop for anything else.My husband and I have been married for 21 years, so it's fun to try these new recipes. Plus, there are cutting, storing and purchasing tips throughout. Great book! You'll love it.

Good cookbook
The recipes are reliable and pictures are great. The cookbook is organized by chapters on types of food, like most cookbooks, so you need to browse through several chapters to find dishes that cook in whatever type of pot you were hoping to use. There are recipes for Instant pot, Dutch oven, slow cooker, skillet, sheet pan or roasting pan, and even a few recipes for casserole dish, sauce pan or loaf pan. Hardly any of the recipes are given for more than one type of pot. You might find a recipe that you want to try and maybe do not have the Dutch oven or slow cooker or Instant Pot. Some of the recipes do include a Variation for a different type of pot but most do not. There are 400 meals, so even if some are unusable it is still full of interesting recipes. Overall, good but not for meal planning in a hurry. You need to spend some time reading this one.

Amazing Simple-ish Recipes. Not Quite One Pot Tho
I've cooked about a fourth of the recipes in this book in the 2 years since i've gotten it. Most of the recipes have become staples; with my Roomate especially valuing the Gumbo recipe and me using the Chili varities.BUT quite often they seem, to me, to stretch the definition of one pot cooking and frequently call for things to be dome in mixing bowls and such. They don't involve cooking in other dishes but in terms of cleaning it is as annoying

Never used a dutch oven before
There are so many recipes that I am excited to try. Reading through the recipes tells me this will be perfect for a small household and not too difficult.

Versatile and helpful!
Love that this gives so many types of recipes. Sheet pan, crock pot, skillet, instant pot, etc. and often offers more than one method per recipe in case you don't have one of these things. Great variety, great flavor from the recipes I've tried so far. And there are so many! I don't eat dairy and there are still so many recipes I can make as is or with only slight modifications (there are also a lot of cheese recipes for cheese-lovers! It's got something for everyone!) as well as a whole vegetarian section, a section for fish, section for pasta, etc.
