Q: Can you use these in a Corsori dual blaze.

According to the specifications the temperature range goes up to 230C. I personally have only used them up to 200C and they are fine. I understand the consort dual blaze is just another type of oven, isn’t it? You better check with the manufacturer

Two inches deep, they are great .

Q: Can these be lined with pastry for apple pies?

Yes, but I find them a bit too flexible to hold their shape when moving them around after they are filled. I place them on a baking tray or down in the metal kind of tins to hold their shape while moving from counter to oven. I find them easier to remove cakes/pies and clean though, so I guess I use mine as more of a liner in my existing tins which have seen better days.
