so this comes with no internals at all??

You will need to order and install RAM and memory separately. This NUC does not come with that. Installation is straightforward and steps are provided in the manual that comes with the NUC.

Does this generate a lot of heat? Like hot enough to heat fried chicken?

I haven't had any heating issues till now. But my usage has been pretty nominal based on the setup I have.

what gpu does it use?

this unit support both integrated graphics or you can add your own GPU - I personally added a 6 port AMD card to mine.
