I know many like to grind sorghum into a flour, but I just enjoy cooking and eating the grain as a side dish or in a soup/casserole etc. in place of rice or potatoes. The grains are pleasantly dense and chewy with a nice nutty flavor. They do take a bit of time to cook - close to an hour or so (similar to beans) but in terms of flavor and nutritional "bang for my buck" they absolutely deliver! Great oatmeal substitute
Once I went lectin free I found myself missing oatmeal. This grain has been a great stand in! It also can be used in savory dishes like stir fry. I find that it cooks best in slow cooker. It freezes well too!

Several Articles it said you could easily pop it like popcorn in your microwave, plus many other uses. Not found it very useful.Several articles talked how tasty it is. Doesn't pop like popcorn in microwave, as in articles instructions. Won't buy again.

How to cook
This is a tasty alternative to rice and such. It takes a long time to cook but I have discovered that if you rinse the sorghum and put it into plenty of water to soak overnight, then rinse and boil with a teaspoon of salt that the cooking time is 1 hour instead of two hours. Then drain. I then spread the grains in a wide dish to dry a little and then put the grains in a plastic bag and put it in the freezer. I can break off chunks for a meal. I use one cup of sorghum with this method.
