Before the pandemic I used to Purchase sim plot potatoes from the restaurant store. This seems to be the closest match I can find.

Great for bread. I just swap out 1/4 cup of regular flour for this and it comes out soft and delicious.

Not Bob's
Rich potato flour. Slightly yellow tinted color. Nice fine texture and tastes great. I also bot Bob's potato flour and it was different. Bob's was very fine and processed with almost no flavor. Bob's was just white dust, almost seemed like pure starch. Herbaila has the potato pizzazz.

Works well. I use it in gluten free bread recipes to add softness and structure. Make sure you add extra water to your recipe if you add some. Figure two Tbs of water for every one Tbs of potato flour.

Good stuff
I like to use a little (about 10%) potato flour in soft white bread (Pullman loaves and similar). This works great, enhancing the softness and smoothness of the bread as desired.
