Xanthan gum is a staple in my pantry, and time and time again I repurchase the Bob's Red Mill one due to the incredible good quality. One of my favorite uses of xanthan gum is protein fluff. Just 2-3 grams blended well with protein powder, liquid, flavored add-ons (cacao powder, fruits) and sweetener yields aa fluffy voluminous dessert. When I want a cold treat I add ice or frozen fruit and I get a delicious ice cream like dessert. It works just as great for making smoothie bowls thicker. I'm not gluten intolerant, but I like to experiment with baking and flours. So xanthan gum becomes an useful ingredient when I use my gluten free flours (almond, coconut, quinoa, rice, etc.). It does a great job to add thickness and bind things together; as long as I measure the right amount, my baked goods always come up perfect. It can also be used as an emulsifier for sauces. Another great use is thickening beverages. I love mixing it with the cacao powder I use for my hot chocolate, as it makes it extra thick and creamy. A little goes as very long way, a bag lasts for many months, so I recommend always storing it in a dry dark pantry so it will keep it's peak quality. Always add less than needed to recipes and measure due diligent, because even a gram or two can make the food a gummy blob. I personally don't like this type resealable bag, I would prefer a standard zip closure. The xanthan gum is a very fine powder and dusting something comes out when I move the bag around and squeeze it. Most times I transfer the product to a air tight container.
