Q: What is the overall thickness of this product? What do I need to use to cut the product?

Regarding thickness, check the manufacturer web site. I used tin snips to cut it. Worked well.

Q: Can this be placed under the carpet to keep the heat out?

There is no reason you couldn't.

Q: Can I use it in the cabin?

It will work just about anywhere…I used it on top of my toaster oven so that I can place things on top without melting…worked for me.

Q: If direct contact side is 400, what's the adhesive side at?

I used it on the tunnel and floorboard of a Jaguar near exhaust pipies. That was on the underneath side, it has worked good as a heat shield. I’m guessing the temp shouldn’t be too hot on the adhesive side but I don’t know exactly what that would be.
