What is the size and capacity of the large?

An 8 inch by 8 inch square. Will steam enough vegetables for a couple meals. I have done two large zucchini and two large squash and an onion in mine at once....made alot !! Steamed asparagus also. Nice size for a family.

Is the silicon liner removable for cleaning?

YES,it comes out.All the items i bought of sistema they all work great for me. AAA.

Can you scramble eggs in the steamer?

Not likely. Within the red outer container is a slotted steamer basket. The uncooked egg mixture would run right through to the water.
