What is the hardware needed to add 2 nvme disks, one for usage and one for backup

You can't hardware Raid nvme on servers unless you get 15th gen with the latest list expensive nvme raid card. The only way to do usage and backup is to buy the ableconn nonbifurcation dual nvme card and create a Raid 1 software raid. You can't use it as OS install though. It'll just be a a second drive location for files or VMs.

Can we buy with no raid and windows server supporting hyper v?

no, you need a raid card, for Example h710 or h710p

Is it possible to have configured with 8 1TB hard drives configured with raid 10 ?
