Q: What's the difference between the classic one and premier?

I sharpen knives as a hobby. I have found no difference between the classic and premier Shun knives with regards to edge holding, resistance to chipping, ultimate attainable sharpness or ease of sharpening. I think the difference is almost entirely cosmetic. The textured blade is claimed to release food more easily, but I doubt that. Given all that, "Beauty is in the eye of the beholder," and the price difference is not prohibitive.

Q: Is the knife a single or double edge?

As you can see from the answers you have received, your question, ‘is it single- or double-edged?’ is being interpreted in two completely different ways. So, if it seems confusing, that’s because it is. There is only a single *edge*, but that edge has two *bevels* on it, one on each side of that single edge.

Q: Is this knife made with high carbon stainless steel?

This is actually a good question. I believe the question was worded bad, but in terms of slicing the same for the left handed person, I think he/she is probably talking about the ergonomics of the handle. That actually is a thing in a lot of products.
