Q: What is the difference between these two items and the commercial grade versions?

These are commercial grade versions. If you visit a restaurant supply store, you will see these sets being sold. I bought a #2 set from a supply store but I wanted a #3 as well but the store has relocated. So I decided to order from Amazon. I will tell you that the pricing is very similar so you are better ordering on-line than go hunting down a supply store. The only advantage I can see to buying from the store is that you can pick and chose. However, the slight variations between units is not enough to warrant driving to a store.

If you're asking about an automatic dishwasher I would not the handles are made of wood It would not take long before they would dry and crack due to getting them too hot

Q: What is the length of the wood portion of the handle?

It seems to me the wooden part is about 6 inches. I bought this as a a gift a couple of years ago, for someone living about 300 miles away, I saw it only once. The handle is quite long, it seems to me about 18 inches. Might be good for restaurant use. Both the metal and wood seemed solid and heavy enough for heavy use.
