Anyone used this without the silicon lining? Is the surface - once the silicon is gone - smooth to work as a regular cast iron pan properly seasoned?

I never noticed a silicone lining. I have used mine as a traditional cast iron omelet pan for several years. It works beautifully so long as you know how to use and maintain a cast iron pan.

Is the size of this model pan for omellets using 2-4 eggs? or 3-5? or 1-3? (AA ExtraLarge)

What is the surface coated with?
