Q: Is this good for use in a bathroom? I have a gap between my shower wall and the tub, and want to put this in, then caulk over it.

That's a big gap for a shower but it should work and reduce the amount of caulk you use.

Q: I have an open expansion joint in my driveway of 3/4"+. Will the 1" backer rod compress into this slightly over 3/4 " joint for a tight seal?

Usually closed cell is used in exterior or moisture prone areas. They will provide more insulation and water proofing.

Q: Can the caulk be painted/

This isn't caulk, its a filler that can fit in large gaps then caulked over. With that in mind, if you use paintable caulk along with the filler... good to go!
