it pours out heavy amounts of liquid. i had hoped for smaller amount poured out for salads, etc. is there a way to make it not gush out so much?

I think it is based on how you pour.

Will it work to fill it with dish washing soap?

I don't see why it wouldn't work. Soap is a little thicker than oil so at the end you might have to put a little water in there and mix it up to get it all out.
