My biggest problem with cheese was that they seem to go moldy before I finished the bag. This freeze dried cheese ends that problem. Never in a hurry afraid it will mode, just use as much as you need. I use a lot of different freeze dried products and just like most I find you need to test each product for water ratio to suit your taste. I found I liked it better if I used more water then the directions say, but that is only me of course, you will find the right ratio you like. It melts just fine and can be used in anything you use cheese for because it is real cheese.

Hard to rate an item like this, since it may not be actually opened for another dozen years. It is a big bucket of stuff. It is doing a great job of sitting in storage. Fits perfectly with all of the other cans of the same size. Will update in 20 years with a review of the contents.

I bought this a couple of years ago, and it sat in my closet until yesterday when I was making lasagna and ran out of mozzarella! Cheese emergency, so I opened this and use it on two layers, and it is incredible! You can't tell the difference at all once it's baked. I didn't reconstitute it first, but I was using a slightly more liquid sauce because I was using those ready bake lasagna noodles, so it all worked out perfectly. Between the noodles and the cheese, the extra liquid got used up, and the lasagna turned out amazing. I was so impressed that I am here to buy another can to put back in my closet. I wasn't really sure how to store this once it was opened, so I ended up putting most of it in freezer bags (just as it comes out of the can, not reconstituted) and stuck them in my freezer. It took two quart sized freezer bags, fyi. The small amount that didn't fit the freezer bags and wasn't used in the lasagna, I just put in a small storage container in the fridge. I was truly impressed by this cheese! It would work equally well on pizza, but I think you would have to reconstitute it for that purpose, a thing I haven't yet tried but even if I only use it in lasagna or toss it into soups and sauces, it's wonderful!

Basically reconstituting this was easy but you should allow overnight for the cheese to moisterize and pump up fully. The cheese isn't really a true mozzarella, but a more of a combo of mozzarella and Monterey Jack, taste-wise. I found it to be good for a quesadilla, especially with a tomato-based salsa.
