Q: Which side is the oring on?

the o-ring is in the female side of the outer ring (it's 3 parts: a flanged male connector shown on the right, a plain male connector and the outer ring which goes on the flanged side and is made up to the threads of the plain male connector.

Q: Are these good for potable water ?

Not sure. I used the for electric hook up.

Q: What size piping is on the non-threaded output? i need a sch80 union that goes on top of my water softener which has a 1" npt pipe.

Both ends of the union are threaded [or not]. To get a mixed union you would probably have to order one of each.

Q: what size are the o-rings?
