I really enjoyed this barley miso — but it is DARK in color, which makes using it alone on broiled dishes makes spotting when they’re finished very hard. If you’re looking to use this in dengu/dengaku, mix it with white miso at a 1:2 or 3 ratio so you can see the miso mixture bubbling. That said, that’s my only complaint. It is salty, but miso just is, and it’s not overwhelmingly so. It’s less sweet than a soybean miso, and I enjoyed the subtle maltiness of it. I would (and will) buy this again, especially for strong winter soups. This would totally get a 5/5 stars if I hadn’t tried to use it as a miso glaze and run into trouble with the broiler, but it’s definitely a 4.5 for me. If you’re into trying alternative miso, this is well worth the time.

I use Miso much. This product is excellent in taste and consistency

Package on the outside looked fine. However, somehow the jar leaked. The lid was still tight and the seal was not broken. But there was miso all over the bubble wrap and the inside of the jar looked dry and hard. Needless to say, I am not eating this. And I will not order this product again unless this issue is resolved.

i am not as wild about this as i am the soy miso but i will not waste this, just dont prefer this over the other
