Very nice flour!
I wanted to try einkorn flour as it is a low gluten, nutrient rich and easy digestible ancient grain. Jovial is a reputable brand and the organic, whole wheat and unbleached options were just what I was looking for. I tried a simple bread recipe from the Jovial website, and it turned out delicious! I will definitely be baking more einkorn bread and look forward to trying other recipies.

It's REAL flour!!!
I know it's a little expensive. However, WHAT A GREAT PRODUCT. I noticed the difference right away after just making a simple waffle recipe. No artificial ANYTHING. Ancient techniques. Real Flour. Bakes fantastic. Fresh and good for the body. I bought the package that has whole wheat (2lbs) and White (2 lbs). The white is now gone!! Trying the whole wheat. America needs to get the poisons out of our foods.

Good but expensive.
Good but expensive. The 1lb bag is very small. I haven’t repurchased because I can’t justify the price. It is a better flour. Doesn’t cook the same as modern flour, but makes recipes a little something different.

My wife is gluten free, except for this
My wife ate wheat growing up, but recently she's had to go gluten free, as the modern wheat causes her moderate inflammation problems. I suggested we try this in our bread maker, and she's been eating it with no ill effects. If you ever wondered why everyone is gluten free now but nobody was when we were kids, you may have been right all along. Also, when I eat a slice of this wheat toast for breakfast, I feel full until lunch. With regular bread I'm starving by 9:30. So you can clearly feel the protein difference when you eat it. And the wheat flavor of the whole wheat bread is amazing, that's what wheat should taste like. Nutty and delicious. We just use the Bake Rapid option on our bread maker and follow the recipe on their website and it comes out great in 2 hours. Very simple. No sourdough rigmarole (although I love sourdough, I don't have time for that). The one thing is that the loaf is much flatter than it would be with regular flour, because of the low gluten content. So using it to bake cookies or cake, you should definitely keep that in mind. We are very thankful for this bread.

Quantity is tiny. Barely enough for one loaf per bag.
I bought this to supplement my sourdough starter. It’s very expensive and didn’t seem to improve my starter. If you are thinking of purchasing this to bake bread you might get two loaves from your $24.00 purchase. This is not a viable quantity for any serious baker. The value does not add up.

A Fresh Experience
I am still building my sourdough starter, but up to this point I am very pleased with the results. My dough is proving to be very active, to a point that I may be a few days ahead of schedule. The smell of the wheat (excluding the sourdough stage) is incredibly fresh and earthy. This will be my first time trying anything that wasn’t bought in a plastic bag, from a grocery store, so I am “very much” hoping this becomes an experience I will always cherish.
