Review: Written on the Box - I love these oils. I use them when I'm too lazy to zest, and I use it when I want extra tang to my desserts. Let me share what it says on the box: "Our citrus oils are all natural essences cold pressed from the rind of the fruit. Extracts and flavorings don't come close. To appreciate the remarkable intensity of these oils, imagine it takes 44 oranges, 66 lemons and 80 limes to fill a 1oz. bottle of oil. Use sparingly in place of peel or zest. Use 1/2 teaspoon per cup of dry ingredients and use 1/4 teaspoon per cup of liquid. Ideal for baking, or in sauces, dressings, soups, glazes, whipped cream and frostings." The box also has 3 recipes included that sound yummy. They are Orange Walnut Muffins, Lemon Pound Cake, and the one I'm especially looking forward to trying are the Lime Pecan Cookies. I've used the Lemon in lemon bars, and the lime oil is really good in Key Lime Pie. One of the reviewers complained about how expensive the oils are. They really aren't for the quality and quantity you get. I don't think she realized that you get THREE packages (9 bottles) of the oil when ordering from desertcart--which should last you quite awhile. The bottles I recently bought say Best Before November 2014. Today is Feburary 25, 2013. I have quite a lot of oil to use in that amount of time. The oils are intense and they DO say use sparingly. Although, you might enjoy them so much that you will use them up quickly, but they are of very good quality and worth the cost.
Review: What a difference oil makes! - These oils are great to use instead of zest or extract. They are packed with flavor and taste fresh, not fake or alcoholic like many extracts tend to do. I bought a glass eye dropper to dispense the oil, do not use one with a plastic tube as it can damage it and leave the plastic scarred. Keep this in mind too if you are using the oils to flavor seltzer water, use glass and not a plastic tumbler. It tastes fresher and more full bodied than any store-bought flavored seltzer and you only need one drop for a 24 oz glass. I use the lime in Thai dishes, the lemon in chicken marinades and a drop of the orange in cookies is very tasty -- there are a million uses for them. You can even use them for cocktails. Be aware that once opened, you must keep them in the refrigerator. The gift pack contains an ounce of each oil in a cute little bottle with a narrow neck. The desertcart price breaks down to less than $3 a bottle which I think is a great value. Since I only need a few drops per recipe, they last a long time. It is also nice to have the smaller bottles so you have fresher oil; a 1 ounce bottle in the fridge is fresher at the end of its use than a 3 ounce bottle sitting in the fridge for three times as long. I keep the extras in my pantry until they are needed.

**Q: Can you put these oils in water for a refreshing drink?**
A: It's oil, so it may not mix well with cool water. And the oils are strong, so you'd want use use them in very small amounts, which are not easy to measure. I think the best approach would be to make a syrup of sugar, water and a little oil, and the syrup with water to make a drink.

### ⭐⭐⭐⭐⭐ Powerful flavors!

These oils have wonderful, natural citrus aromas. They are very strong - I added only about 1/8 teaspoon of the lemon oil to a large (3c flour) pound cake, and the finished cake tasted quite lemony. Keep in mind, these are pure citrus oils, not extracts, so the quantity you use should be less than what you are accustomed to using with extracts. Store them in the refrigerator. I have kept these in the refrigerator for months and the oils remain strong and flavorful. I wish these came with dropper caps so I could measure tiny amounts when needed.
