Although this knife is very light in weight compared to the Pro S riveted version, it has the same blade. It can certainly take the abuse provided by a professional kitchen. I bought this to replace my first paring knife (Henckels 31061 that was probably forged in the late 70's or mid 80's when I bought it). I think that is even before the Professional S line was in production. I only saw knives with wooden handles back then other than the Four Star plastic handled knives that a lot of the other chefs used. It just had worn out a bit from sharpening it away for decades. This knife is razor blade sharp out of the package. It was natural for me to push harder through the carrot that I first used it on since I was used to my old knife and it flew through it like a hot blade through butter. The blade is more flexible than the older 31061, which I am happy about. That provides more control for precision cutting. It's not all bendy like a filet knife. It just gives a little when going through hard material. It's also long enough to slice through Roma tomatoes and kiwi, I'm really happy with this knife and would recommend it to anyone who needs a solid paring knife.
