Does this make it easier for me to remove a broken piece from the pipe?

It works great! the cam design making it easy to catch pipe fragments, the tool just needs to be held parallel to the axis of the broken piece, not too difficult.

Can these be used for nipple installation as well or only for extraction?

Yes, but you should be installing a nipple at the same time you install what goes on the end; like a cap or an elbow or faucet or other fitting. Use the fitting, i.e., turn the fitting, and NOT the nipple to tighten a nipple. Hand tighten the nipple and then use the fitting or faucet for final tightening and NOT this product.

How about the quality of this product? Is it easy to break?

This is made of durable steel, which is more durable and resistant to breakage.

Will this fit Sch 80 pipe nipples?

You get a set of three wrenches 3/8, 1/2, and 3/4 as you try to turn them inside a broken pipe, the geared teeth begin to expand and really latch on to the inside of the pipe with enough torque to loose/start to remove virtually any frozen/ rusted pipe. I am not sure exactly how much the geared teeth expand beyond the nominal diameters I mentioned. But it looks like for example the 3/4 would grab on to the inside of a 1” pipe This is really a great little tool. It saved me big $$$$$$ that a plumber would have charged !!
