Hammer Stahl German Steel 10 Inch Chef Knife

Bought this for my DIL. I’ve used these knives for several years and they are wonderful.

It has retained a nice edge for over a month with daily usage. I split chickens with it and go through bone daily. I just sharpened it on a wet stone after 6 weeks. Only problem I had was that the first blade sent was in a box labeled "slicer" and it pierced the box and the tip was bent. I returned it and the replacement has been great

I bought this knife as a gift for myself. It was an opened package display item but otherwise in new condition. The knife arrived razor sharp and is a pleasure to work with. For those not familiar, the Hammer Stahl knives are a bit heavier in the handles but that makes them perfectly balanced on your finger at the front of the handle.

So far so good. It us a little heavy in the tang and handle so it takes a more firm grip and is balance towards the rear. Full blade edge makes it practical for slicing sashimi and requires a slight rocking motion because it is classic French design after all but it can certainly get the job done. A lot of steel for your money. Good mid ranged AP knife for professionals and easy on the eyes.
