Best Way to Slice Meat for Jerky
I bought the TSM Products Jerky Cutting Board and 10-Inch Slicer Knife because I wanted to try making beef jerky in my smoker. The product worked great ... much better than the jerky strip cutter I bought at the local outdoor store.What this product does is allow for even cuts of meat. Even cuts translate into great-tasting jerky. Cut with the grain for tough jerky. Cut against the grain for soft jerky. I personally prefer against the grain. Season the meat with a dry rub or soak in a marinade ... then put it on the smoker. Yum! I have included a few pictures of the type of cuts you can achieve with this cutting board.I am able to slice 10lbs of meat in about 20 minutes. Even slices every time. No hand fatigue. Resting the blade against the blade guide of the cutting board insures a perfectly even cut every time.This is cutting board is much better for cutting jerky strips than a jerky slicer. A jerky slicer looks like a meat grinder. You put the meat in the top of the slicer and sharp blades slice the meat into strips that are about 1/4" wide. There are several issues with a jerky slicer ... (1) its messy; (2) the strips are like shoestrings; (3) its hard to clean up; (4) its difficult to store due to its height. This cutting board has none of these issues.The TSM Products Jerky Cutting Board and 10-Inch Slicer Knife takes a few seconds to set up. It cuts nice, even slices of meat that can then be cut into strips of your desired width. Clean up takes only a few moments of time ... and the knife and cutting board are dishwasher safe. Super important in making uniform slices for jerky.
Excellent product. It is easy to make those thin slices for perfect jerky. Will buy it again.

Absolute junk. Don't buy.
The knife is worthless; you will need to use a different knife. The tray slides everywhere as there isn't a nonstick substance on the bottom. Even with a damp towel under it, it still slipped. Beef gets caught between the knife and plastic.You are MUCH better off simply freezing the meat for 2 hours and then freehand slicing it with a real knife.I missed my return period, but don't make the same mistake. Don't buy this.

Good construction, plastic inserts for adjusting thickness are great. Knife is just so so, but works well. I was pleasantly surprised to find that this came from SausageMaker - I love their Uncle Abe's Jerky Mix - I use it for all my jerky.It does slide around unless you put a rubber mat or something under it. I used a couple of rubberized flexible jar opening grippers and everything was great. Stainless steel and food-grade plastic inserts are easy to clean.

Jerky Made Easy!
I was in a store and saw a wood version sort of like this that I have never seen before. It was over priced and I could see the biggest problem with it was there was no guide to keep your slices consistent and more importantly to keep the knife away from your hands. Before seeing it I thought the only way to make muscle jerky was to have a deli slicer or to just slice it by hand, so I had never even attempted it. I searched on amazon for something similar and found this. Couldn't beat it for the price and it came with the knife. I like that it is metal and plastic instead of wood because of the ease of cleaning and I don't like using wood with raw meat.You can tell these things are hand made. There are welding spots where the "guide" meets the sides or "handles" of the base. The welding is really sturdy so it shouldn't snap off or anything.The cheap looking generic knife is EXCELLENT. It has a really sharp blade that slices very easily. I use it for trimming my meat as well.The description says that the knife and board are dishwasher proof but doesn't specify if they plastic inserts are. I put mine in the dishwasher and they have slightly warped even in the top shelf. It in no way effects the function of them since the meat weighs them down when it is placed on them.I really wish that they included a third insert for when the meat is too thin for your hand to be safely holding the meat. When it gets down to the last few slices it becomes VERY difficult to cut. I use a tiny little cutting board to place on top of it and push down so I can get those last few cuts, but that still isn't the best solution. I learned the hard way and was using my fist to hold it down. I was going very slow and sure enough, I sliced my knuckle pretty good!For my muscle jerky I use both boards for the slices. It comes out nice and thin once dried. The cuts aren't 100% consistent but doesn't really effect your drying time. It all depends on the shape of your meat and the pressure you are putting on the top of the meat as well. If you dry it extra long in your dehydrator or oven you can make the jerky very crisp so its easier for older people or people with mouth problems to chew. I have also been able to get the perfect slightly chewy texture with the thinnest slice just by adjusting the time in the dehydrator. I haven't noticed any significant sliding problems. But I put pressure on my meat to keep it in place by putting a small cutting board on top of it.I love this product and I have used it many times since buying it. It makes making your own jerky so nice and easy!!!
