Legit Bread Mix - Original, 2 Pack

Sure would have been nice to have known that before purchasing
I am writing this review mainly for a 'heads up' to anyone thinking about purchasing this bread. Nowhere could I find anything about what you needed to make it except to purchase their special loaf pan, This bread takes 7 eggs, that is right - SEVEN eggs for one loaf. I am allergic to eggs. Sure would have been nice to have known that before purchasing.

It really is legit, and delicious too!
First, I have to say I've been eating a paleo diet out of necessity for almost 2 years. I'm managing some health & autoimmune issues, and can't handle many gluten free products. I also can't have coconut or almond products, which is 98% of paleo baking. Which means, I haven't even tried to make paleo bread until now. I do a fair amount of cooking & even baking with cassava flour, so I know it makes decent baked goods. However, making brownies, pancakes or even chocolate chip cookies is not even close to attempting to make bread.I didn't even know how much I missed sandwich bread, until I tasted legit bread! I've had the recipe from one of Jennifer's books for awhile now. I debated about making it, but it required several ingredients I didn't have in my GF, grain free kitchen. I also thought, "man that loaf pan is tiny & it requires 7eggs? This is going to be a lot of money & time for a tiny loaf." I finally decided to buy the mix, so I could check it out. I made my first loaf, and immediately made a bacon egg & cheese sandwich. It was so good! I froze the rest of my loaf, sliced & wrapped each slice in saran wrap so I can pull out a slice or two anytime I want one. I've been toasting a slice in my toaster oven with my usual egg breakfast, and it is really adding some "normalcy" back into my life. My next project is making them into croutons--another gluten filled item I miss! Yes, the pan is smaller than your typical loaf pan. However, my bread rose quite well and made a larger slice than I expected. I'm also not making sandwich with it everyday, so the size isn't an issue for me.If you are a fan of cassava based products like this one, you should definitely check out Jennifer's books. Her recipes use both the whole plant (Yuca) to make yuca dough, and cassava flour. You can also find several delicious cassava flour recipes on Otto's Natural website.

No longer banging my head
When my daughter needed to start bringing lunches to school, I began banging my head against the wall. We eat mostly Paleo, but my daughter loves bread and I knew she would want sandwiches in her lunch, just like her classmates.I had a tasty recipe for Paleo bread that I found a few years ago online called "fat bread," but it took me FOREVER to make and the clean up was not fun. The thought of making that bread for her daily lunches made me tremble. Enter Amazon and Legit Bread Mix.This stuff is seriously amazing. It's really yummy (I love it with warm butter.), the clean up is minimal (You make the whole thing in a blender, so the only thing to clean is the blender.), and it's packed with protein (It's made with 7 eggs. Since I'm feeding a picky 3-year-old, I cheer for anything that adds protein to her daily intake.).We make about one loaf a week, and we use the recommended pan. Fat Daddio's Anodized Aluminum Bread Pan, 7.75 Inch x 3.75 Inch x 2.75 Inch . I've ordered this two-pack three or four times now, and the shipping has always been prompt and my order has always been correct.P.S. Ours comes out best if we bake it a little longer than suggested. We do 55 minutes.

Glad to have this bread option available even if it's ...
Delicious! The only bread I eat these days.I have tried several other paleo companies but this is the only one thay doesn't leave an aftertaste for me and even my husband likes it. I did my research first so be warned - there are 4 more ingredients you need to add (eggs, honey - I sub for maple syrup, acv, oil) but the final result is yummy. I usually customize it with some dried fruit (like prunes, dates or blueberries), walnuts or pecans, flax etc, basically what's around the house. I have also successfully used it for French bread. Glad to have this bread option available even if it's not your regular loaf price (its ingredients don't come cheap).

Disappointing on many levels
I had high hopes for this bread mix, but I was disappointed that it required so many ingredients to make the bread after spending so much on the mix itself. Taste-wise, it was only ok. Definitely didn't taste like "legit" bread to me, but it wasn't bad for gluten free bread. Not great, but edible. I followed the instructions but found it to be overcooked in only half the time it was supposed to bake. I don't plan to buy this again.

A mix that comes with a "shopping list" !
Here is the problem I have with the mix - I'm not sure what I bought exactly... It comes pretty much with a shopping list. I understand adding an egg, a spoon of oil, etc. but 7 eggs? I have 7 eggs if I just bought a pack of 12... Why is that part of the package not part of the images for the product? I'm attaching one.The second problem I have it's my own mistake - it comes with potato starch and potato flour which is in the "maybe" paleo category. I know it is paleo certified, still, it's a "maybe" paleo category. Only because of the official take of the Paleo Foundation is yes on the potatoes, it doesn't make it the right food for me personally. Again - the potato part is only my personal opinion.

Best GF bread I've had
This is easily the best gluten free bread that we've either made or had. It's amazing fresh out of the oven, but the true test is whether it's any good the next day. I cut a piece off and toasted it the next day and then ate it with peanut butter. It held it's sponginess, texture, and flavor quite well. I highly recommend it.A couple of notes though: it does require 7 eggs. Also, the directions say to mix it in a blender, but I think using beaters with the dough would be easier. The dough is thick enough that it gets hard to spoon or scrape out of the bottom of the blender. Plus, it does get quite thick, which put a burden on even my very strong VitaMix blender.
