Amazing!
Cuts to a 15 degree angle which is what’s needed for some Japanese knives. Some have lower degree but 15 is fine so I have Sharpened all my Asian knives to a 15dgree edge and it cutting like butter. Dangerously sharp! I do Have the other modul for the American 20 degree knives which works just as well.

Perfect fit and flawless performance
I ordered this replacement knife sharpener that sharpens at a 15 degree angle. The normal sharpener (the one when you buy the Chef's Choice 2100 professional/commercial model is a 20 degree angle sharpener.). The 15 degree angle sharpener is for Asian knives like your Japanese suishi knives. The replacement kit perfectly slides into tjhe housing when you remove the other module. You only need to be careful that you lock the reppacement into base unit. I recommend you turn it down and hit th ereplacement module witht he palm of your hand to ensure it is firmly inserted into the drive motor.

Sharpens my knives quickly and well. Very easy to use. Wish they offered the motor base with this instead of having to order it separately
