I buttered the top of the loaf when it came out of the oven because the exterior was so hard. But then I read to cover the bread with a tea towel..which I believe also softens the exterior. So I did both, buttered the top and after the butter soaked in, I covered it lightly with a tea towel and the hard exterior transformed into lightly crunchy. I love the texture of the bread and the slightly sweet flavor.
