Q: Can this smoker connect to a natural gas source?

Designed for use with LP gas. Manual says nothing about Natural gas conversion. Without consulting the manufacturer I would have to say no.

Q: Does the standard size fit a full brisket, or would i need to get different cuts?

I have not done a brisket but the inside cooking space on one rack would be about 12" deep and 14 " wide. If you had a 20" brisket you would have to cut it in half.
