Will a rebel T8i and a 75-300mm lens fit?

Good morning, Sorry for the delay, as I was out of town. I have a Cannon Rebel EOS T7 . The width of the camera storage is 12" wide and 10" long with a depth of 5 1/2" deep. I can't imagine this not fitting any camera. I hope this helps you with your decision, as for me I'm very pleased with my purchase.

How can I buy more of the Velcro inserts the orange ones for the camera bags?

The manufacturer may sell more, however you would need to contact them directly (through their seller information page on Amazon, not the questions and answers), or there may be alternative sellers with similar dividers which would work the same, as long as it's still Velcro (hook and loop lol).

No it has the snap across the chest but no belt

I want to fit 50-400 with a7iii and carry maybe 17-28 and 28-75, plus water and snacks. Will this fit all of that comfortably?

I'm not sure about the 50-400, but I can fit a 70-200, 24-70, and 16-35 plus the canon camera body. You will have plenty of room for other things.
