It's good. My wife's from Buffalo and in Buffalo, Chiavetas is practically a religion, so we bought some. I'm not from Buffalo so perhaps I can provide a more objective assessment than those for whom Chiavetas has emotional significance.This is basically a big bottle of cider vinegar with some salt, poultry seasoning (around a half dozen spices that is also sold by spice companies as a powder), and a few other things. As you'd expect, the results are very vinegary, because it's mostly cider vinegar. In my mind, the lack of oil makes this more of a brine or perhaps "brinerade" than a marinade. Like any other brine, the salt will work its way into the meat and beneficially affect the tissue, which leads to water absorption and, voila, makes the meat more juicy. But you could get juicier chicken just by soaking it in salty water for a few hours. That doesn't detract from Chiavetas, but I hope it clarifies what's going on a little - no magic, just basic brining, which is a good thing, if you don't have blood pressure issues.A vinegar brine does give the meat a very salty, vinegary taste. So ... marinating this overnight is not going to give you the typical "marinade" flavor; it's going to give the meat a vinegary brine taste. I would not recommend marinating overnight with Chiavetas, I'd say more like 3-4 hours tops. Unless you add oil, which converts it from a brinerade to a true marinade, in which case 1-2 days could work. Without the oil, it will mush up the outer texture of the meat if used too long.I use it only for chicken, and even better, for bone-in chicken, where it does kick up the flavor and add a lot. I couldn't see using this on steak. Maybe on pork ribs, but not on a loin or chop. It's really a chicken enhancer, not a general meat enhancer.Overall, it's an interesting product. Its regional loyalty in upstate NY is quite fierce, but I'm not sure the product totally lives up to the hype. I do like it a lot for bone-in chicken, but not much else.

Love the stuff! A taste of home.
An absolute Western New York staple. I've lived in the Seattle area for 20 years+ now and order the marinade several times per year. My friends ALWAYS make their way to my house when I cook a batch of Chiavettas chicken. Here's a suggestion on how best to use this marinade. Brush your chix thighs with marinade lightly just before you put on your preheated 325 degree grill. Mind your flare ups! Turn and grill the thighs until the meat is almost cooked through(about 165 degrees) and have a crispy skin. Pull the chix and place in a tall baking pan, liberally pour a pool of marinade and cover and seal the pan with tin foil. Now put it in a 325 degree oven for 20 mins. The steam drives the marinade into the meat and will make it unbelievably tender. Enjoy kids! Go Bills!

Greatest Marinade Ever Made!
If you're from Western New York, no explanation is necessary. If you're not, you are in for a real treat! This is a wonderful marinade, allowing you to make the best barbecued chicken possible! Even if it's past outdoor grilling season, you can make delicious chicken in the oven. One of the best smells at the Erie County Fair is the Chiavetta chicken grilling - and the longest line at the Fair is at the tent serving that chicken! Once you try it, you'll know what I'm talking about. Enjoy!!

Just buy it!
Unbelievable. This marinade does best with half or quarter chickens. Marinade overnight or for 2 days. I’ve done rubs, mairinades, bribes, this here is the real deal. Nice vinegar flavor. Does best if you smoke it on one side of the grill. Ordering another jug as we speak. I live in Albany this marinade made in buffalo NY I can’t believe I haven’t gotten this sooner!

GREAT MARINATE- Chicken, Veggies, Pork
BEST MARINATE for Chicken, Vegetables and Pork. Yes, it is heavier on the vinegar taste, but this brings out more of the flavors of the meat. Every marinate has similar spices... pepper, salt, garlic, etc. But it's the combination that makes or breaks a marinate. For those very few who say it's nothing special- please point me to the better choices out there. One other benefit of this marinate is that it does not need to be refridgerated after opening. So buying the largest size is the best for me. You also can't beat the price point. Online, most of the cost is due to weight to ship... if you were in WNY, the price is very economical. For those who don't know- this product started with a volunteer fire company holding cookouts for raising money. Has a great origin!

Yes, Yes and Hell's YES!!!!
This stuff smells revolting, no doubt...and you don't even need to refrigerate after opening so you know there's something in there that's so nasty that nothing can grow or ruin it, lol....but seriously, beyond the intense vinegar smell this stuff makes some tasty chicken! It's not your classic BBQ seasoning but more like El Pollo Loco with a nice twist. I'd suggest taking the finish to well done and using an open grill with real charcoal and some good mesquite or hickory to boot....this is GOOD stuff, definitely worth adding to your seasoning arsenal. Wish it was cheaper but you get what you pay for...

I don’t know whom to blame so 3 stars this time around
I have ordered this product many time over the years and have never had issues. I received my package today with a notification for the post office that it was “received damaged” and it was leaking through the shipping box. Upon closer investigation, the lid had been removed and the silver safety seal was MISSING. Needless to say this was not to comforting; certainly even less during a pandemic. I am a fan of the product but this is unacceptable. $18.00 donation to someone! I hate
