Is this tool adjustable and can i use it on stainless steel?

Yes, it adjustable but I haven't found that necessary yet. I bought it for use on 16-20 guage stainless steel and it works very well.

What gauge sizes is this good for?

Depends on the material. If you are working with stainless steel I would say16-20 gauge. You can go thicker on aluminum while cold rolled steel is in-between. The blades wear out quickly so keep this in mind
