These are actually U-gouges, not V-gouges. The difference is significant if you are a wood carver. A U-gouge carves a line of relatively uniform width. A V-gouge carves a more "lively" line that varies in width depending on how deep it plunges into the material. This is especially true of 90 degree V-gouges, where a slight difference in depth translates to a relatively large variation in line width. Each of the tools in this set have been ground to a U profile, and can't do what you need a V-gouge to do. You would do better to buy one of the sets of Flexcut palm tools that includes a 60 degree V-tool, which in my experience does everything you want a V-gouge to do.
