What material are these made of? ABS?

The lock jaw is made from hard polimar and very durable when used as designed. I have had mine for Many months now and they haven’t failed me yet. The quick release and lock capability are easy to operate

Do they have an open action, where you can easily remove it with one hand?

Yes, designed for easy on, easy off one hand installation and removal.

I am wanting these so plates won't move in the deadlift. i don't know if i should purchase the olys or these. i have steel plates if that makes a dif?

Both OLY 2 and PRO 2 work for deadlifts, and plate type doesn't make a difference. PRO 2 has extra locking tab which is more suitable for deadlifts with repeated drops of the bar.
