I actually got these to make steaks in my pizza oven. It has a 12 in opening, so it's not always easy to find an iron skillet that will fit the bill. They came pre-seasoned, although after each use, I just about have to re-season them, as the extreme heat of the oven tends to destroy the seasoning. The pizza oven gets to 900 degrees, so it's important to put one of these in while the oven is cold and let them heat together. (Based on previous experience, failure to do that causes the iron to crack due to the sudden expansion - not a fun thing.) A skillet in the oven can get so hot, it will literally glow orange, so cast iron is the only thing you can really use. I've tried one so far, and the results were great. I used a silicone wrap around the handle to remove it, because a regular cloth potholder isn't effective either. For my semi-unusual use, these should work well. I'll probably also use them in the regular oven for broiling.

I am far beyond impressed with this set of cast iron sizzler pans. The weight is so nicely balanced, the proportions are manageable and pleasing, and the finish easily rivals and perhaps exceeds its American counterpart. Think beyond fajitas - these are great for skillet cookies and brownies, individual slab pies, and more. You could make oval pizzas for each person in your family/dinner group. I see now that the company also offers bamboo boards to go underneath them, but you could also use silicone trivets. OOOH - I just remembered that Denny's used to serve delicious breakfast skillet meals with cubed fried potatoes and eggs and such - these skillets would be great for recreating that meal at home. Anyway, I am so very pleased with these skillets - they truly exceeded my expectations.

These pans are good for frying cheese, heating up tortillas, making pupusas. They heat up evenly and quickly and are very good to use.
